I'll be honest when I first heard the idea of combining Japanese and Colombian food, my first reaction was confusion. Not because either cuisine is bad, obviously. But because they seem like total opposites. Japan is precise, minimal, centuries of tradition behind every dish. Colombia is loud in the best way tropical, colorful, the kind of food you eat at a table full of people you love.So how does that work on a single plate? That's not fusion, that's just a trend.Real fusion cuisine means you understand two cooking traditions well enough to find where they actually connect. Not force them together. Find the thread that was already there and follow it.With Japanese and Colombian food, that thread is seafood. Japan built an entire culinary culture around fish.
